About event

Crispy crust, juicy crumb, fine roasted aromas and a balanced taste - but how do you actually recognize a really good bread?

Together with the organic whole food bakery Gradwohl, we immerse ourselves in the world of handcrafted whole grain bread and learn to judge bread with all our senses. From grain and flour to sourdough and the finished loaf, participants learn which factors influence quality, taste and digestibility.

Together with the organic whole-food bakery Gradwohl, we immerse ourselves in the world of hand-made whole grain bread and learn to judge bread with all our senses. From grain and flour to sourdough and the finished loaf, participants learn which factors influence quality, taste and wholesomeness.

The focus is on a joint sensory tasting of various breads. Selected examples show how raw materials, manufacturing processes and baking crafts affect the crust, crumb, juiciness, smell and taste. A comparison is also made to industrially produced baked goods and the difference time, craftsmanship and high-quality organic ingredients can make can be experienced.

In addition, master baker Oliver Gradwohl gives practical insights into the correct handling of bread: How do you cut bread correctly? How does it stay fresh for as long as possible? And what should you pay attention to when storing it?
